I love salads of any kind. One of my absolute favorite salads is broccoli salad. Here is an easy and yummy recipe for it, enjoy! It’s crunchy, creamy, and packed with flavor.
Ingredients for the Salad
4 cups fresh broccoli florets, cut into bite-sized pieces
1/2 cup red onion, finely chopped
1/2 cup shredded cheddar cheese
1/3 cup dried cranberries or raisins
1/3 cup sunflower seeds or chopped nuts
6-8 slices cooked bacon, crumbled
Ingredients for the Dressing
1/2 cup mayonnaise, or Kewpie Mayo
2 tablespoons sour cream or plain Greek yogurt
1 tablespoon apple cider vinegar (I like mine a little more tart so I double the ACV)
1 tablespoon honey or granulated sugar
Salt and pepper to taste
Prepare the Salad Ingredients
Wash and thoroughly dry the broccoli florets.
In a large mixing bowl, combine the broccoli, red onion, cheddar cheese, cranberries, sunflower seeds, and bacon.
Make the Dressing
In a small bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, honey, salt, and pepper until smooth. Adjust seasoning to taste.
Assemble the Salad
Pour the dressing over the salad ingredients and toss until everything is evenly coated.
Cover the salad and refrigerate for at least 30 minutes to let the flavors meld.
Serve chilled.
You could add a variety of things to this, swap things out, etc. it’s great as a meal, or a side dish at any potluck.
